Title: Pasta with Collards and Sausage

1lbSausage, spicy, smoked
  ;sliced
1pkMushrooms, 8oz; sliced
2clGarlic; minced
3tbOlive oil
2pkCollard greens, 10oz frozen
  ; thawed and well drained
1tbItalian seasoning, dry
2cnTomatoes, chunky, Italian seasoned, 14 1/2 oz; undrained
1lbPenne or Rigatoni; cooked
  Parmesan cheese; grated

Brown sausage in a Dutch oven; drain on paper towels. Set aside Cook mushrooms and garlic in olive oil in Dutch oven over medium heat, stirring constantly until tender. Add sausage, collard greens, Italian seasoning, and tomatoes. Cook 10 minutes. Add pasta, and toss well.
